Casino games generally do not allow changing key binds while playing, which is true for slot machines and table games, with few exceptions. In the case of poker or blackjack, however, the software may let you configure buttons that represent betting, raising, folding, and other game commands. For example, you can find such options on PokerStars or 888Poker.

RTG and IGT casino software tend to have fixed keybinds for slots. For live dealer games, there are no keybinds – it’s all click-based.

Want to customize? Try casino simulator games, such as Casino Simulator 2019 (these allow you to adjust the settings). See also the mobile casinos of Bet365 and William Hill; in some cases, they provide that flexibility.

key binds aren't actually used by most online casinos as you navigate those using a mouse cursor. But for casino-like games with controllers, try looking at games like Gonzo's Quest and Book of Dead available on Steam. They sometimes allow for post-launch remapping. I'm not sure what type of casino game you're playing. Some allow remapping keys during play. However, most online casinos (Playtech/Microgaming games) are web based and use default key bindings or touch. Desktop versions of some games (slots w/ bonuses/live dealer w/ proprietary software) may allow remapping some keys. Betsoft desktop clients allow limited remapping.
